I would imagine that the majority of people learning Irish would live in the UK or Republic of Ireland. If this is the case, it would make sense to tailor the course to use the spellings they're already most familiar with.

The best figures that us ordinary users of Duolingo have available suggest that just over 50% of those who register for the Irish course are from the US. I don't know of any numbers that tell us about who persists beyond the first 2 or 3 skills, after the St Patricks's Day effect wears off, though US based learners are very well represented in the discussion threads, even at the most advanced level of the Irish Tree.

You can read a bit more about this in the paper that Oisín Ó Dóinn, one of the course contributors, wrote last year, as well as some of the background stories that informed that paper.
