Why is "the chimney sweep" correct translation? Shouldn't it be "the chimney sweepER", as we are speaking of a person/profession!

Both are accepted and make sense, but this is just one of those cases where English is a bit weird and inconsistent

I'm afraid this is the same as in the sentence with the swineherd, which is the pig herder (person/profession) and not the herd of pigs.

Hyrdinden og Skorstensfejeren ("The Shepherdess and the Chimney Sweep"). I had not heard of it, but Google came up with it when I just fed in the sentence. :)
