"гітара" is pronounced with a voiced H. I guess, if you looked for "гитара" on the web, you found the Russian word. Which is pronounced with a "G".

I understood from you now that г is pronounced with h in Ukrainian and with g in Russian. Am I right?

Pretty much. Note the following, though:

  • Ґ ([g])was not used in Ukrainian for some time, and there might be minor issues using it when typing from a standard PC keyboard, so it MIGHT be used inconsistently by some people and in some texts.

  • In Russian, a few words with Г are still pronounced with a voiced or devoiced [x] instead (normally Г means [g] when voiced and [k] when devoiced). First, «бог» and, for some speakers. «господи» ("God"). Only in these forms! Second, the interjection «ага» ("yep"). Third, «мягкий» and «лёгкий» are pronounced as if they were spelt «мяхкий» and «лёхкий»

  • While Г is pronounced as [g] in Standard Russian, southern Russian dialects use the same sound as in Ukrainian instead.

Г in russian is like G in Go, Г in Ukrainian is like H in Heart

No, that's not quite correct. Please read @Shady_arc's explanation above.

It's like the letter 'G' in the word 'great', for example.

In Ukrainian, Ґ is g (rare) and Г is always h. In Russian there is no Ґ letter and Г is pronounced as g

So why we say Гора (hora) (with h) or Книга (Knyha) (with h)?

It is pronounced /h/. There is a separate letter 'Ґ' pronounced as /g/. It think they just tend to use 'Г 'for both /g/ and /h/ sounds.

But, when can we pronounce Г as g and as h?

I think you just have to memorize the pronunciation of the word when you first encountered it.
