why can I not say "the student uses two examples from the book"? isn't the the same as takes?

While you're right, if Duolingo starts doing this, people will start saying: hey! I though taking was 'nemen' and not 'gebruiken' (using).

So even though the two sentences are quite similar and are commonly used interchangeably, for learning's sake, they want you to use the correct translation, to make sure you've understood the words right.
