I'm guessing the bare infinitive "put" here does not mean it's a command form, but is just one way of translating "mettre."

the command form (imperative) of 'mettre' is : "mettez" (plural or polite"vous") or "mets" (singular familiar "tu) or "mettons" (nous)

Why sur le côté and not a côté?

Both are correct, depending on context.
