why we cant use "ikh chashki"?

Их ча́шки (ikh chashki) would be understood as a plural, 'their cups'.

Их ча́шки could mean 'their cup' in some contexts when a genitive case is required, for example: Я не пил(а́) из из ча́шки (Ya ne pila iz ikh chashki) 'I didn't drink from their cup', but here, we don't have a context. So we use the nominative case, because it's the most basic case.
