To [fjær/fjør] fra stjerten [på/til] [en/én] føniks.

If you say "én føniks" you're specifically pointing out that if you shouldn't need more than one phoenix. "en føniks" would be good enough, as you'd say "to fjær fra stjerten på to fønikser" if you wanted the feathers from two phoenices.

If you want to point out a specific phoenix, you should probably just use the name of the poenix instead.
