Could someone possibly explain eclipsis a little better to me like when to use it? Thanks

Well to start, Eclipsis is used for possession when using Our or Their

For example

ár mbia - Our food

a mbia - Their food

Eclipsis is also used when you use the numbers 7-10 when giving a number to a noun

Seacht gcótaí - Seven coats

Naoi gcótaí - Nine coats

Eclipsis is also used after a Preposition + Definite Article

For example

Ag an mbord - at the table

Ar an mbord - on the table

Eclipsis is also used after some words like i "in" or "if"

For example

i mbosca - in a box

And just a side note, if a word that starts with a vowel comes after one of these rules, they kind of get eclipsed, but with a n- before it unless the previous word finishes with an n

úll - apple

ár n-úll - our apple

Seacht n-úll - seven apples

ar an úll - on the apple

Some other situations where you will encounter eclipsis are when you are asking a question in the present tense - an dtiomáineann tú?, and with genitive plurals with the definite article - fuaim na gcapall - "the sound of the horses"
