One can always replace 'za' with 'zbyt', but the converse is not true. When in doubt, it's safer to use use 'zbyt'.

'zbyt' is pronounced the way it's written: Z B Y T. 'b' is voiced, so 'z' stays voiced as well.

Well, "way" is an intensifier that was not in the Polish sentence. I'd say it's like "o wiele za brudny".
