Does anyone know when to use 'zbyt' versus 'za'?
One can always replace 'za' with 'zbyt', but the converse is not true.
When in doubt, it's safer to use use 'zbyt'.

I think zbyt has more a connotation of "rather" in this context?

The pronunciation of 'zbyt' sounds like 'z' to me
'zbyt' is pronounced the way it's written: Z B Y T. 'b' is voiced, so 'z' stays voiced as well.
Why cant I say "This room is way too dirty"?
Well, "way" is an intensifier that was not in the Polish sentence. I'd say it's like "o wiele za brudny".
