Санкт-Петербург

Anytime I've seen the Russian name of St. Petersburg, I've always seen it written as above, until this course, which simply calls it Петербург. Is Санкт-Петербург more formal, whereas just Петербург is more casual and colloquial?

Exactly. You may also come across С.-Петербург, Питер, С-Пб. The full name is too long to pronounce and to some people it seems quite pompous.
