when can I omit Dydd? I tried it here, and got it wrong...

Me, too. I realised my mistake, though; "dydd Iau" roughly translates as "day of Jupiter", and "bore Iau" roughly translates to "morning of Jupiter". So, to say "bore dydd Iau" is to say "Thurs-day morning" and to say "bore Iau" is to say "Thurs-morning".
