I'm a little confused with the syntax. I've done a little bit of Irish and from what I know Celtic languages are VSO. Why is it imperative that I say "Dydd Llun dw i'n gwisgo fest" and not "Dw i'n gwisgo fest dydd llun"?

It's the same difference as "On Monday I'm wearing a vest" and "I'm wearing a vest on Monday". Both make sense but you have changed the sentence unnecessarily.
