When I listen to this on my computer, it sounds like the voice is saying "pięk" rather than "pięć." Is this the correct pronunciation?

No. k is k, ć is ć, there are no pronunciation surprises in Polish.

I don't know if I would write it as "pięk", but something does indeed sound quite strange about the first word.

When translating from Polish to English, you should be able to write "5, 4, 3, 2, 1" as the English answer... it should work.

Hmm, it marked mine as incorrect and showed the correct answer being the words. I didn't use commas with the numbers so maybe that's it? I didn't use commas with the words in another answer though, and that was fine.
