Sometimes cases are so weird, how comes "biuro" transforms to "biurze" or "okno" to "okien"... Is there some logic behind this?

Well, it's a very broad question, but I'd advise to:

look for posts about cases here: https://www.duolingo.com/comment/16296174

or this website: http://mowicpopolsku.com/polish-grammar/cases/ (note that it's not completely devoid of mistakes, but still it's one of the best that you can find)
