So does "eich...chi" work like a bracket around whatever is owned? (When) can you leave the final "chi" out?


Yes, it works as a bracket.

You can leave out the auxiliary 'chi' whenever it is clear what is being owned by 'you', although in the colloquial language is is very common for it to be left in anyway.
