To by brzmiało trochę tak, jakby Polska była jedynym interesującym krajem, a nie jednym z wielu interesujących krajów.
Well, actually, you could. If you had just been on a visit to Czech R., Slowakia and Poland, you could say that "Poland is the interesting country" as a sort of emphasis that Poland was the one that you found to be the most interesting.
But why say it and not "Poland is/was the most interesting country (of those)"?
It would be an emphatic form. In casual writing, you could write the "the" as "THE" or "t h e".. Not worth changing the exercise though.....
