Nó is like the word 'it' i think, while đây means 'this'.

I think it's more proper to refer to bread as "bánh mì" and cake (pastries too) as "bánh" for the sake of learning basic Vietnamese. I'm sure you and your family already knew which "bánh" you were referring to anyway since you knew the context of the situation.
