Can anyone clarify for me why it is "widział" and not "zobaczył" for "saw"? It seems to me the sentence indicates a one-time event.


Yes, it should be accepted as well. "Zobaczył" here would mean that he saw it for a moment (pairs very well with 'suddenly'), "widział" denotes a longer time.
