Can't you also translate this as "We don't have to be farmers." or would that look different?

No sorry, that would be different. Here we're making a statement that we are not something. The phrase "không phải là" means you're negating the statement. Think of it as you trying to right a wrong. Someone said that we are farmers, but that statement is "not right". That is incorrect. "Not right" = "không phải". If you want to say "We don't have to be farmers" then you would say "Chúng tôi không cần trở thành nông dân". Hope that helps!
