How do I use the EM-Dash (—)?

I know that I can use an EM-Dash (—) in place of "to be" in between two verbs. Ex. мокка—кофе (A mocha is coffee)

Can I also use it in between a noun and a verb or is this the time to use "быть/есть" (to be)? Ex. мокка—ушел (The mocha is gone)

I'm still an absolute beginner, but I'm pretty sure that you don't need the dash in those cases because in Russian there are no auxiliary verbs, and the verbs take care of everything on their own.
