Is it grammatically correct in Vietnamese to add specification to She? Like Co (gai) ay muon an banh mi. Or is it not necessary or just wrong.

It's perfectly fine to say "cô gái ấy". However, that could also be translated as "that girl". They are the same, but different.... but still the same in some contexts.
