Pas vraiment... I guess maybe "I saw a dog sleeping" is more about the action that the dog is doing (sleeping) whereas "I saw a dog asleep" is about the state the dog is in (asleep) and perhaps a bit more passive sounding. They have basically the same meaning though.

C'est bon à mon avis si vous venez tout juste de voir un chien qui dort l'action est entrain de se dérouler le chien dort encore. I saw = l'action est totalement finie.

On peut dire "I saw a dog sleeping", "I saw a sleeping dog", ou "I saw a dog asleep" de façon interchangeable. Pour la première et la troisième phrases, à cause du syntaxe, on peut vous demander "Who was asleep, you or the dog?" mais la réponse est évident et la question serait une petite plaisanterie.
