Only "pływam statkiem co weekend" is correct, this sentence has a mistake and should not be in a course.

pływam is for repeated action or a "directionless" action

płynę is right now in a specified direction.

If you add a destination, would it make it correct? Like "Płynę statkiem do wyspy co weekend"?

not really. If it is "co weekend" it should be "pływam".

If it is now it can be "płynę statkiem do wyspy"

(this sentence should not appear n the course any more.)
