It sounds unnatural. It should be "I can't sleep after coffee."

Which is "Nie mogę spać po kawie". Which is of course a more natural sentence, but that's not what the Polish one says.

Well, it is an addition, but a very logical one... one could say that "Nie śpię po kawie" doesn't have any literal sense, it's rather a mental shortcut.
