Why not את הבקבוק יין? Are both versions correct? Is there a difference?

This is a construct state; in such cases, only the second noun gets the 'ה. For example,

(birthday) יום הולדת => יום ההולדת

(school) בית ספר => בית הספר

I should add that colloquially it's common to hear היום הולדת, הבית ספר or הבקבוק יין, maybe even more so than the correct way.
