Could you say: Η καμηλοπάρδαλη είναι ένα ζώο?

Yes, that would also be accepted but we don't use the indefinite article in Greek as much as in English.

In Portuguese, "Camelopárdale" is the ancient word for giraffe. I love these similarities with my language.

Camelopardalis is also a constellation.

So the last η of καμηλοπάρδαλη melts together with the εί of είναι when said together.
