If a "shuk" is an open-Air traditional market, then we say IN the market. AT would mean a supermarket

No a supermarket is a סופרמרקט or just סופר for short.

what is wrong with "from the market"?

"from the market" is a grammatically correct English sentence, but "from" isn't the most accurate translation of the prefix "-ב" which is usually rendered as "in" in English.
