If I want to say "Today I learned X", do I say "I dag lärde mig jag X" or "I dag lärde jag mig X"? What's the general word order for things like this?

While the verb will occasionally move in front of the subject because of the v2 rule, the other normal word orders are usually virtually intact. That means the subject goes before the object, so I dag lärde jag mig x is correct.

You say "I dag lärde jag mig X". It is always I before me but I don't know why... I guess that is simply the way it is.

It's because Swedish is an SVO language. The basic word order is subject - verb - object.
