It's all in the context or imagined context. 'The children watch soccer and the mother..." Seems to fit.

Why αγώνα χάντμπολ? Is it secretly genitive without the extra του?

You could also say: Η μητέρα βλέπει τον αγώνα χάντμπολ. Η μητέρα βλέπει τον αγώνα χειροσφαίρισης.

as well as:
Η μητέρα παρακολουθεί τον αγώνα του χειροσφαίρισης. Η μητέρα παρακολουθεί τον αγώνα του χάντμπολ.

And in English both: The mother watches the handball game. The mother watches the game of handball.
