why j'aime BIEN ...? Doesn't that make it I REALLY like to read?

"j'aime bien" is relatively moderate in terms of intensity.

yes, I just went for j'aime lire and that was deemed wrong which seems unreasonable

Yup, "J'aime lire, chaque livre étant intéressant" should also be accepted.

j'aime bien means I like j'aime means I like or I love so when someone says j'aime bien this means like only, not love j'aime could mean either

"j'aime", "j'aime beaucoup", "j'aime bien" all mean the same thing. It is more your personal way of expressing your feelings that will make you pick one or the other adverb to nuance "j'aime". If you are enthusiast, you can easily say "j'adore lire".
