Why is it gaeth rather than gaethon (thieves being plural)?

This is explained somewhere in the course notes. The third person singular form, such as gaeth... is used with singular pronouns (e/o, hi, etc) and with all nouns, whether singular or plural.

The third person plural form (gaethon, etc) is only used with nhw.
