Why is the 'yn' in there? It seems like it could be left out?

No, it cannot be left out (there are a very few exceptions).

As explained in the notes, yn is needed to link forms of bod (being, to be) with verb-nouns such as hoffi (liking, to like) where the meaning is continous or unfinished (I like, I am running, I was eating, I will watch, I would say, etc).
