Possibly incorrect pronunciation of 's'

The speaker has consistently been pronouncing the 's' in words like 'sap', 'rijst' and 'spijt' as "sh" (as in "shap", "rijsht" and "shpijt".). At first, I thought that that's just how the 's' is pronounced in Dutch but then I watched several videos that made it clear that that's not the case (If I remember correctly, the 'sj' combination makes the "sh" sound). So, what's going on here? I don't want to learn the wrong thing.

It must be your perception because I don't hear it pronounced as sh

Native speaker here. To me the Dutch s is like the S in the word Snake. It makes a ssssss sound like a hissing snake. Dutch orthography is kinda like English though so there are cases where the spelling makes no sense. I recommend watching Dutch videos and mimicking the speakers to learn the pronunciation.
