what is the difference between стих and стихотворение?

I'm just wondering since they both mean poem or poetry.

стих is a verse, whereas стихотворение is the whole poem.

That is, until you go plural: cтихи = стихотворения (maybe not in the most pedantic, academic usage but certainly in common speech).
And even in its singular form, стих is commonly used as as a synonym for стихотворение, as klose777 and lena_gardariki have already pointed out.

Yep, "стихи" is a legit word for "poetry" in general. BTW, we can also use "стишок" for "poem", it is informal but you will probably find it in a dictionary (unlike "стих" in this meaning).

Strictly speaking, the two words have different meanings as w1ndh0ek rightly mentioned. But among children, "стих" is often used as an abbreviation for "стихотворение", so they get mixed up :)

Стих is more inclusive. It is a style of writing poetry (wiki says it comes from ancient Greek ὁ στίχος — ряд, строй (row, verse?)). So it can be applied both to a work of poetry and to style said work is written in. (e.g. белый стих)

Стихотворение is a specific type of poetic work- I would say it has to be below a certain size (a page?). For example Eugene Onegin is not a стихотворение ( would be considered about as offensive as if you called it a ditty). It isn't even a poem (поэма) , which is larger than a "стихотворение" It is "Роман в стихах".

Anywayyyyy. Any стихотворение can be called a стих (at least in common speech - not sure how academia would react) , but not all meanings of стих can be replaced by стихотворение. Hence in the spirit of inclusiveness as well as simplicity of pronunciation I would advise you to use стих instead of стихотворение.
