It would be el sartén, because sartén is a masculine word. :)

Edit: I was wrong, sartén can be a feminine and masculine word.

According to spanish dictionary, "Sartén" is a feminine noun in the majority of Spanish-speaking countries, but is masculine in some areas." So I guess it depends on what kind of Spanish you are learning.

Iz ličnog iskustva, može i jedno i drugo, ali u Španiji se koristi samo ženski oblik, dok tamo daleko u drugim državama u kojima se govori španski, recimo u Argentini oba oblika :)

You can say "la sartén" or "el sartén". Both are correct.
