Jij has more emphasis and can only be used as the subject.

Je has less emphasis and can be used as the subject, object, possessive pronoun, and reflexive pronoun

Jou is only for the direct object

U is formal

Jullie is plural and plural possessive

Also, 'gij' = the equivalent of 'jij' in Flanders and the Southern Netherlands. Same for 'ge' and 'je', and soforth.

In Flanders, 'u' is in between informal and formal.

"Je" is more customarily used, "jij" is more stressed. In a group of three people, one asks one friend, "Heb je honger?" The friend responds. They then turn to the other friend. "Heb jij honger?" It is like in English, "Are you hungry?" "Are YOU hungry?" They are still technically interchangeable, though.
