(not native French speaker but...) "la poesie" would translate as "wine is the poetry in a bottle" which doesn't sound right, partitif is natural choice here: "wine is (like some) poetry in a bottle".
I think one could say "le vin est une poésie en bouteille", "wine is a poem in a bottle", or especially "ce vin..." to praise some specific wine.

I tried "le vin est la poesie" and it also wasn't accepted. Does anyone have an explanation of why it's necessary to say "de la poesie"
