If the speaker wanted to say 'we are boys', why not just say 'Nous sommes garçons?'

In French, it is a must to use articles while this is not the case in English. Generally, if the noun in the English sentence doesn't have an article before it, "de/du/des" would be needed for the French sentence.

If you want to say "I am a woman" it would be "je suis une femme"

An example of "de la" is:-

"Je mange de la glace" = "I am eating some ice cream"

So we use "de la" to mean "some" when we are talking about a feminine uncountable noun.

When do you and don't you pronounce the "s" in "des"? In the pronunciation of "nous sommes des garcons", I hear "de". Is it left out because you can assume from "sommes" that it is plural?

You pronounce the S if the first sound of the next word is a vowel (Remember that words like homme start with an H, but the sound is a vowel) so it would be deS hommes, or deS ours.

Unless its a liason, with the next word starting with a vowel. Vous mangeons is "voo mawnj" were vous etes is "voo seh-tehs"

"Garçon" pertains to younger male. If you would want to say "We are guys." I think it would be more appropriate to use "homme".
