ss for esset (ß)

Modern German in Germany and definitely in Switzerland has replaced ß with ss for esset.

Can Duolingo please allow the use of ss without a warning each time?

I can confirm what olimo states. It is used less in the new orthography compared to the old one, true, but Eszett still remains where a sharp s follows a long vocal sound. What might cause you trouble is that many german speakers do not follow the rules when writing with a keyboard layout that doesn't provide ß, though the standard german layout does, of course. Even worse, some natives themselves are confused about the new system and might think that Eszett is abolished.

As far as I understand, "ß" was not canceled altogether.

Nach der reformierten Schreibung steht ß nur noch nach einem langen Vokal und nach einem Diphthong: das Maß – des Maßes; gießen – es gießt; außen – äußerst; kreißen – Kreißsaal. Nach einem kurzen betonten Vokal steht ss nicht mehr nur, wenn ein weiterer Vokal folgt, sondern auch vor Konsonanten und am Silbenende, wo in traditioneller Schreibung ein ß steht (Fluss, muss, nass, passt, Riss, wässrig).
