Sounds a little like a frittata. Or a Spanish tortilla.

Kind of but, an omelette cooked with fries. Slightly different.

My father was English. He made French fry omelettes. He fried sliced potatoes in a pan and added eggs.

Chipsi mayai is a popular street food in East Africa! Technically it does translate to french fry omelette as that describes the ingredients but I've never heard anybody call it that in English

It's called Chips Mayai (in Kenya)!?

What on earth is a french fry omelette?!

As I indicated last year it's scrambled eggs with left over French fries stirred in. Quite tasty as well as frugal!

Would it be correct if I put viazi chipsi?

No, it's referring to a specific dish in Tanzania. It's basically french fries cooked into eggs - quite delightful!
