There's a free translation of the Poetic Edda on Wikisource: https://sv.wikisource.org/wiki/S%C3%A4munds_Edda It's a translation from 1913, but it's free, so it's good.

Brian Branston's work is a classic, the kind of book you might find in any twelve-year-old's room. I haven't read it in a very long time so I can't vouch for exactly how simple the Swedish is, but it's aimed mostly at children. Just make sure you get Nordisk mytologi: Vikingatidens gudar och hjältar since Gudar och hjältar i nordisk mytologi has apparently been butchered by the publisher recently.

There's also Asgård: sagor ur den nordiska mytologin by Sofi Hjort, of which I've heard good things but which I have not read.

And if you like to read comics, the Danish children's comic Valhalla (https://en.wikipedia.org/wiki/Valhalla_(comics)) is absolutely brilliant both in Danish and in translation into Swedish. It's available in beautiful hardcovers now that the series has been concluded.
