Doesn't it also mean "beef" ? I see it used for beef everywhere.

I think for meat there is a different classifier, "thịt". So cow is "con bò" while beef is "thịt bò"

I think English is the weird one here for having different words for an animal vs the meat from that animal.

Duolingo is pretty scrupulous about writing ‘một con bò’ for that.
