Some pages (for example any "forum" page) haven't yet been revamped. When you're on those page, you're still under the old website. Hence the "back to old format".

I didn't like, before was easier to access all the courses in several languages. Now it's necessary to go out the website and changing the initial language, to access that courses. It was a bad change.

Now it's necessary to go out the website and changing the initial language

I'm under the new web version and I can still do it without having to go out www.duolingo.com: the "Add a new course" button is still at the bottom of the list. And, there, you can select any course rom any source language.
Has the "Add a new course" link disappeared from your dropdown menu (when you hover over the flag in the top blue menubar?

That said, if you're looking for a more handy switch (between any course), have a look here.

The "Add a new course" only redirect for the courses languages available for one specific language, like "english" or "spanish" for instance. Before it was possible to change the languages in "Settings" and after "learning language", and then all the courses on Duolingo was available, in just one button for this. Now this is not possible, for me it was a very bad change.

In addition, the font color should be darker to facilitate quick reading, which is not available in the choice questions.

No, as before(*), this page let you choose any course (from any source language): you have a dropdown menu on top-right to choose the source language.

(*) At least for me it has always been like that on that page and still is.

Well, 5 clicks: click on settings then click on "Learning language" menu then click on the dropdown menu then click on the course you want to switch to then click on "save changes".
The "Add a new course" process is also 5 clicks: click on "Add a new course" then click on the dropdown menu then click on the source language you want then click on the target language you want then click "Switch to course".

I saw the previous link "you'll be able to switch with only 1 click" that never worked for me with my Windows 10 system.

On my menu, the "learning language" just change for languages for english, or just spanish, or just portuguese when I go out of the website, not any course of all available languages as before. This changes are recent, I'll search in the next days how it will stay. Good studies!

that never worked for me with my Windows 10 system

If you have Chrome, Microsoft Edge, Safari, Opera Next, Firefox, Chromium (and CoolNovo, Rockmelt, ...), it should work since you can install the script Manager Tampermonkey.
Once said manager installed, you'll be able to load the script of my previous link then (normally) use it.

Crossing fingers it'll work for you.
