I said "you are a student" and its incorrect. Is there a differnece with plural or singular? Or can it be used interchangeably?
How are singular and plural being interchanged in the same sentence? Do you look at one person and BAM! there are other people there?

No. "You all are students", yes, although that sounds naff. But "you are all students" has a slightly different meaning, and would not be correct.
