Estoy en el hotel de la playa, I'd say (I'm at the hotel by/on the beach)

Estoy en la playa del hotel = I'm at the hotel beach

They have a slightly different meaning.

The first one lets me know you're at the hotel that is in the beach.

The second one tells me you're on the beach of the hotel.

So, in your case, I think that estoy en el hotel de la playa is the correct one :)
