Word order in german always gets me, but shouldn't "Nun er spielt den starken Mann" also be accepted. I thought this is just a matter of emphasis?

No, it's not a matter of emphasis. "Nun er spielt.." is wrong.

jetzt is more immediate and momentary, it means something is just occuring or is just starting now.

Very little difference, 'nun' is a bit more formal than 'jetzt'.
