"I walk on grass" without article is alright but it would refer to such activity in general.

"私は芝生の上を歩く。" as I understand is referring to a single instance and thus the piece of land I walk on is specific, and therefore we would use "the".

It would be fine if we say, for example
I feel relaxed when I walk on grass
"芝生の上を歩くと落ち着く。"
