Here we speak about some concrete animal, so we are emphasizing it with "to zvíře".
"The" is accepted.

Why is "je" necessary? What is wrong with, "To zvíře mladé, ale velké."?
Czech is not Russian, the copula is obligatory the same way as the English "is".

"this animal" is "toto zvíře", "tohle zvíře", etc.... but not "to zvíře".

I'm aware of that, it's my native language. And we don't use "toto/tohle" and "to" (as a noun modifier) interchangeably, even though other Slavic languages might.
