Seeing how korean has no articles, I'd say the/a are pretty much interchangeable unless there is a "그"

I wonder though, if the general version "steam bread" would be correct

People don't usually say "a bread." "A slice of bread" or "a piece of bread" or a bag/loaf etc sounds more natural.
