Weird French Greeting?

On a recent holiday to France, more specifically Arcachon, I heard a weird greeting that I want to clarify. After a morning run with my French uncle, we went into a small shop nearby, where he greeted the owner with 'Bonjour'.

However, the owner greeted back with 'Bonsoir, monsieur', which means good evening, even though it was 8am. This has been bothering me for quite some time as I haven't figured out why he would say that.

Could the owner not be a local, or is there a similar greeting that sounds like this?

I think the owner was tired maybe he had not got to bed the night before. Bonsoir is just for the evening he made a mistake.
